Berries are a summertime staple that can make a standout dessert. Elizabeth Mayhew, Real Simple magazine’s style director, was invited on the “Today” show to share some yummy recipes that are easy to throw together and will leave you wanting s'more. Here are the recipes:
Ice Cream Pie With Warm Blueberry Sauce
Hands-on time: 40 minutes
Total time: 45 minutes
Makes 4 servings
1 store-bought refrigerated pie crust (such as Pillsbury)
2 cups fresh blueberries
1/3 cup sugar
1/4 cup water
1 tablespoon cornstarch
1/8 teaspoon ground cinnamon
2 pints vanilla ice cream
Heat oven to 375°F. Coat the bottom and sides of 4 tart pans with cooking spray, vegetable oil, or butter. Divide the pie crust into 4 portions and roll them out so they’re slightly larger than the pans. Press the dough into the pans. Run a rolling pin over the tops to trim the excess dough. Line the dough with parchment paper or foil, fitting it up the sides. Fill with pie weights, dried beans, or uncooked rice. Place the pans on a baking sheet and bake for 10 minutes. Remove the weights and paper and let cool. Meanwhile, in a saucepan over medium heat, cook the berries, sugar, water, cornstarch, and cinnamon, until the sauce thickens slightly, 5 to 6 minutes. Remove from heat and cool slightly. Remove the crusts from pans and transfer to serving plates. Place 1/2 pint of ice cream in each tart. Spoon some sauce on top.
Tip: If you don’t own small tart pans, make one large pie using the same recipe.
Raspberry S’Mores
Hands-on time: 10 minutes
Total time: 10 minutes
Makes 4 servings
8 graham crackers
32 large marshmallows, cut in half
2 (1.5 ounce) chocolate bars (such as Hershey’s)
1 cup fresh raspberries
Adjust rack to middle position and heat broiler or toaster oven. Break the crackers in half to form squares and place on a baking sheet. Arrange 4 marshmallow halves on top of each square. Broil for 30 to 60 seconds, or until the marshmallows are golden brown. Break each chocolate bar into 12 pieces. Arrange the chocolate and raspberries on top of half the crackers. Invert the remaining marshmallow-topped crackers onto the raspberry-and-chocolate-topped crackers, pressing gently to make sandwiches. Stack them, if desired.
Tip: For more deluxe s’mores, use high-quality chocolate, like Scharffen Berger or Valrhona.
